These succulent sweet pork and apple sandwiches are good enough for dinner or an amped up brown-bag lunch.

3 tbsp. Ketchup
1 tbsp. honey
1 tbsp. low-sodium soy sauce
2 tsp. Grated Ginger
- Heat oven to 400 degrees F. In a bowl, combine the ketchup, honey, soy sauce, and ginger. On a rimmed baking sheet, place the pork and brush with half the glaze. Transfer to the oven; roast until a thermometer registers 145 degrees F, 10 to 12 minutes. Brush with remaining glaze and let rest for at least 5 minutes before thinly slicing.
- While pork is resting, place baguette pieces on a baking sheet. Bake until lightly toasted, 3 to 5 minutes.
- Form sandwiches on baguettes with the sliced pork, apple, and arugula.
